Want to get all the benefits of green cabbage in a tasty side dish? My homemade coleslaw recipe is a family delight. I make it with homemade mayo so it's super-healthy, zero preservatives or weird stuff, and 100% good for you. 


 


Juliana's Homemade Coleslaw Recipe (Gluten-Free, Zero Sugar, Clean Ingredients)

Ingredients:
1 head green cabbage, shredded
2-3 large carrots, shredded
1 large red onion, minced
4-5 diced pickle spears (or more, as desired)
1 cup homemade  mayonnaise (see below)
salt & pepper, to taste
1/4 cup pickle juice (or more, as desired)

Home made mayonnaise - you'll need an immersion blender
1 cup extra light virgin olive oil
1 egg
1/2 tsp salt
1/4 tsp pepper
juice from 1/2 lemon, or more, as desired

 

Directions:

  1. In a tall, narrow jar, add all mayonnaise ingredients. Place an immersion blender at the bottom and blend, slowly lifting as the mayo emulsifies.

  2. In a large mixing bowl, combine cabbage, carrot, onion and pickles.

  3. In a small bowl, whisk mayonnaise, pickle juice, salt and pepper until smooth.

  4. Pour dressing over cabbage mixture and toss until evenly coated.

  5. Chill for at least 30 minutes before serving to let flavors meld.

  6. Devour. 

This coleslaw is crisp, creamy, and full of skin-loving nutrients — the perfect way to enjoy cabbage regularly.
